The Home of Noodles--- Shanxi

Updated: Jun 10, 2019

Shanxi Province is my hometown.

As the birthplace of the Yellow River culture, it has a history of nearly a thousand years. Many years ago our ancestors settled, cultivated and lived on the banks of the Yellow River. In this history, the food culture of Shanxi is also constantly developing. Up to now, there are nearly 70 unique varieties. Among these foods, Shanxi's noodles is the most famous. They are divided into many categories from the taste and shape. Next, I will introduce the famous food in Shanxi.

Shanxi Sliced Noodles

The most unique aspect of the noodles is how it is made. The traditional noodles shaving knives are wide metal sheets that are lifted at both ends, and noodles are cut like a pencil into the pot with the boiling water. The noodles thus cut are wide in the middle and have a willow-like shape with a triangular cross section. This process looks amazing. Here's a video showing how it's made. Sliced Noodles Making

Rolled Hulless Oats Lassgne

Not only is this name strange, but the shape looks strange. In fact, according to Wikipedia, it is oat flour pasta rolls shaped like biscuit rolls.

It is my favorite food. Because when the noodles are steamed, you can make different tastings, such as spicy and sour sauce, and tomato sauce, as well as garlic sauce. Whenever I go to my grandmother's house, she will do it for me. Therefore, its meaning to me is not only a kind of food, but also the expression of my grandmother's love for me.

Here's a tutorial from YouTube. Its produce process is rather cumbersome, but those who are interested can try it.

Pingyao Beef

Pingyao beef is very famous in China from the Qing Dynasty. It has a history of hundreds of years. In China, especially in the northern of China, in important festivals, relatives and friends will present the beautifully packaged Pingyao beef as a gift. In 2003, the China Food Administration even protected it.

First, it is coated with salt and placed in a jar for pickling. Then put the beef in the pot and simmer for about 10 hours with a small fire. Unlike beef jerky, Pingyao beef retains the soft taste of the beef.

It is worth mentioning that in addition to food, Pingyao is also an ancient city with a long history. If you are interested in Chinese culture, going to Pingyao is a good choice.
