Biang Biang Noodles

Steamed mutton

Steamed Mutton is another traditional dish of Xi'an. It includes mutton soup and cake. Its soup is made with mutton and the cooked lamb is put together in a bowl. The cake is baked in a special process, and then it is put into small pieces and placed in a bowl to soak.

Eating steamed mutton in the winter is very good, because both mutton and soup can warm the stomach. If you eat it with pickled garlic, it will be more delicious.


Steamed Cold Noodles(Liangpi)

Liangpi is a kind of noodles in Xi'an. It is a dish made from wheat or rice flour. Although liangpi is served cold, they are served in every season, including winter. In the Summer, Liangpi is generally eaten with other condiments, while winter it can be fried with bean sprouts.

This type of noodles is usually steamed with a special rice paste. It looks a bit transparent and eats chewy. The indispensable partner of Liangpi is vinegar and garlic.
